Make a cream with the egg yolks, pecorino and pepper Cut the guanciale and on slow heat let it crisp out and loose some of us fat, Add some of the fat into the cream and whisk over the boiling water to bring the cream at 62 Celsius so that everything is incorporated and pasteurized Drop the pasta in the cream add a little water and mix everything. Plate it nice and add guanciale on top and enjoy with a glass of wine 🍷 cheers
