If you have all the ingredients you can have a plate of delicious noodles on the table within 25 to 30 minutes with prep included. Although sesame oil is a fat and you should treat it like a sauce. Sesame oil has incredible aroma and flavor but burns at a low temp. Add it to a sauce instead and use a high temp oil like canola or peanut for cooking.

Ingredients

½ cupchicken stock
2 tablespoonsoyster sauce
2 tablespoonshoisin sauce
2 tablespoonslight soy sauce
regular
2 tablespoonsdark soy sauce
2 teaspooncornstarch
2 teaspoonsesame oil
3 tablespoonsvegetable oil
4 teaspoonsginger
minced
2 teaspoonsgarlic
minced
1.5 poundchicken breast
or thigh, thin bite-sized slices
3carrots
small, julienned
3baby bok choy
bottoms trimmed, cut on bias
1onion
medium, sliced
16 ozfresh egg noodles
or dried lo mein noodles cooked
9 ozbean sprouts
Scallions
if desired
Instructions
Step 1
If using dried noodles, boil for 2 minutes less than directed on package. Drain and rinse in cold water to stop cooking process. Noodles will finish cooking when added to pan.
Step 2
For the sauce: Stir together the chicken stock, oyster sauce, hoisin sauce, soy sauces, cornstarch and sesame oil. Set aside.
Step 3
For the noodles: Heat a pan to high and add the oil. Once you see wisps of white smoke, add the ginger and garlic and cook until light brown and fragrant, about 20 seconds. Stir in the chicken and cook until medium, about 1 minute.
Step 4
Add the onion, carrots, and bok choy to the pan and cook until tender, about 1-2 minutes.
Step 5
Add bean sprouts and cook 1-2 minutes until sprouts just begin to soften. Add your fresh noodles or your cooked packaged noodles and cook for 1-2 more minutes.
Step 6
Stir the sauce well before pouring into the pan. Mix well to incorporate all ingredients with sauce. Continue to cook until the chicken is cooked through and the sauce starts to bubble and thicken. Transfer to a serving platter and garnish with scallions if desired.
