Step 1
1. Heat the oil in a large skillet over medium heat for two minutes, or until shimmering. Season the pork chops on both sides with the Cajun seasoning.
Step 2
2. Place the pork chops in the hot oil and cook for about six minutes per side for medium-done, or longer if you want them well done. (When medium-done a meat thermometer will read 160°F when inserted in the middle of a chop). Removed from the pan and let it rest for five minutes.
Step 3
3. Meanwhile, make the aïoli. Place the mayonnaise, parsley, lemon juice, and garlic in a small bowl and mix well.
Step 4
4. Serve the pork chops with the aïoli.
