Instructions

Step 1
Cook 6 medium potatoes, with skins. Cool and skin them. Grate on a coarse grater into a large bowl.
Step 2
Put 1/2 cup butter into saucepan with 2 cups grated sharp cheddar cheese. Stir over low heat until melted.
Step 3
Remove from heat, add 1 1/2 cup room temp sour cream, 1/2 cup chopped green onions, salt and pepper to taste. Mix thoroughly and stir into grated potatoes .
Step 4
Put into greased 2qt casserole pan. Cover and bake at 350 for 35 minutes. Dot with butter and sprinkle with paprika.
