Instructions
Step 1
Shred all vegetables, I used attachment on a kitchen stand mixer. Use a cheese clothes or yogurt mesh bash to remove excess water from shredded vegetables.
Step 2
Use a meat grinder to grind up chicken thighs (or use ground chicken or turkey).
Step 3
Add the spices and vegetables to the ground chicken and mix well.
Step 4
Separate 12 egg rolls. Weigh out 55 grams of mixture and place diagonally on wrap. Roll the wraps per instructions on packaging. Use water to seal the end closed.
Step 5
Coat the egg rolls with a thin coat of olive oil and preheat an air fryer at 400 degrees.
Step 6
Air fry the egg rolls for 15 minutes, turning a couple times to brown evenly.

I use Nasoya Vegan egg roll wrappers, they taste great and reduce the calories by 5 for each roll.
