Instructions

Step 1
In a large bowl mix dry ingredients. In a medium bowl, combine buttermilk, egg and butter. Add the buttermilk mixture to flour mixture and mix them together using a hand mixer for about 30 seconds, until they are combined. It's OK if there are lumps, do not overmix the batter. Let the batter rest for about 5 minutes.
Step 2
Heat a large nonstick skillet or griddle over medium heat. Spray it with cooking spray or brush it with additional melted butter.
Step 3
Use a measuring cup to pour 1/3 cup of the batter into the skillet and cook the pancakes for 1 1/2 to 2 minutes on each side, or until it is golden brown. Transfer the pancakes to a plate and repeat.
