Instructions
Step 1
Separate eggs, placing whites in a medium mixing bowl and yolks in a separate medium mixing bowl.
Step 2
Add cream of tartar (or alternatively lemon juice) to egg whites. Use a stand mixer, hand mixer, or immersion blender with a whisk attachment to fluff up whites into a meringue with stiff peaks.
Step 3
In a large mixing bowl, mix the flour, baking powder, sugar and salt.
Step 4
In the bowl with the egg yolks, add the milk and melted butter and whisk until fully incorporated. Pour the mixture into the dry ingredients and mix with a whisk until combined (leaving small lumps is recommended).
Step 5
With a spatula, fold egg whites into the base batter carefully to preserve as much whipped air as possible in the final batter.
Step 6
Heat the griddle to 325 F or the pan to medium-high let sit at least 10 minutes while heating the griddle or pan. Add butter for cooking and spoon batter for each pancake (1/2 to 3/4 cup for medium-sized pancakes).
Step 7
Cook for 2 minutes or until the first side is golden and bubbles form around the edges of the upside batter. Then flip and cook for another 45 seconds.
Step 8
Stack pancakes on a plate and serve immediately with butter, syrup, fruit and/or whipped cream. Enjoy!
