Ingredients

2 Tbspolive oil
1onion
finely chopped
250gbroccoli
stem and florets cut into bite-sized pieces
2garlic cloves
grated
15gbasil
leaves and stalks separated, chopped
50gblack olives
chopped, from a jar, plus 50ml of the brine
400gcan chopped tomatoes
150gtomato passata
700gbutter beans
large, from a jar or cans, 500g drained weight, drained and rinsed
100gmature cheddar grated
150gmozzarella
grated
Instructions

PREP 15 mins plus cooling
Step 3
COOK 40 mins
Step 4
Heat the oven to 180C/160C fan/gas
Step 5
Put the oil in a large frying pan and fry the onions gently until soft but not brown, about 3-5 mins.
Step 6
Stir in the broccoli, garlic and basil stalks, and fry for 3-4 mins more.
Step 7
Tip in the olives, olive brine, tomatoes, passata and beans, and stir.
Step 8
Add the basil leaves.
Step 9
Season.
Step 10
Pour into a 21cm baking dish, sprinkle over the cheeses and bake for 20-25 mins, or until the cheese is golden and the sauce is bubbling.
Step 11
Leave to cool for around 10-15 mins, then serve.
