These little cookie dough bliss balls take minutes to put together and are such a delicious snack 😍 you would never guess how well-balanced they are! They contain beans, whole grains, nuts, seeds and some chocolate to make them super satisfying. I love to keep some in the fridge for a quick snack or dessert (they keep for up to 5 days in the fridge) and am always so grateful to remember that they're there if I get hungry throughout the day.

Instructions
Step 1
Add the oats to the food processor and process for 10 seconds to make oat flour.
Step 2
Add the Medjool dates, chickpea, hemp seeds, coconut flakes, peanut butter and vanilla extract, and process until a ball is formed.
Step 3
Chop the chocolate, and add to the mixture using your hands.
Step 4
Roll into bite-size balls.
