Chickpea “Tuna” Salad

This is an amazing make-ahead to share and easy to adjust to preference. The mashed texture resembles the flaky “tuna” look without the fish! I usually use 1/2 c dry chickpeas soaked overnight and boiled until tender; however, canned is a great alternative!

Instructions

Step 1
Drain chickpeas (canned or homemade) and add to bowl
Step 2
Begin mashing chickpeas with fork, mash to a rough texture
Step 3
Once almost all mashed, add diced onion and finish mashing
Step 4
In a separate bowl, combine relish, jalapeños, mayonnaise, mustard, spices; adjust seasonings to taste
Step 5
Combine sauce mixture to mashed chickpeas and onion; add ingredients to preferences
