Step 1
Step 1 Preheat your oven to 425 F (220 C).

Step 2 Get the biggest bowl you have. Add the sweet potatoes, cauliflower, onion, and chickpeas along with the oil and all the spices. Mix everything together gently until the veggies are coated in the oil and spices. Pour the mixture onto a sheet pan and bake for 30-35 minutes, flipping/stirring the veggies halfway.

Step 3 Let the veggies cool completely after roasting. I let mine sit in the fridge overnight before wrapping, but it usually takes 40 mins for them to cool.

Step 4 When you're ready to wrap - if using regular tortillas (not GF): mash the avocado and lime juice with salt in a bowl. Add 1/4 of the avocado mixture to a tortilla. Pro tip: shape the avocado mixture into the same shape you want your wrap to be! Then place 1/4 of the cooled veggie mixture on top of the avocado in the same shape. Press down slightly. Then roll up your wraps! If you're new to wrapping, I recommend watching a quick YouTube video first. Repeat this process for the remaining wraps and store in the fridge.
