Instructions
Step 1
Slice mini cucumber vertically first with two chopsticks placed underneath, flip cucumber and slice it on the other side at 45 degrees to get a nice and long caterpillar looking cucumber; Simply marinate it with some salt for 10 minutes.
Step 2
Dice garlic and ginger and slice green onion, cut dried chili.
Step 3
Place dried chili in a heated pan with some cooking oil in it, stir to cook on low heat until they become crispy, remove from the heat.
Step 4
Add more cooking oil in the heated pan to heat up until it becomes smoky, and simply pour hot oil into the diced garlic, ginger and green onion , further add in light soy sauce, dark vinegar, sugar, Szechuan peppercorn powder, Szechuan chili sauce to mix.
Step 5
Drain marinated cucumber and place them nicely in a plate. Simply pour the pre made spicy sauce on top of cucumber, garnish with crispy dried chili. Ready to serve.
