Sweet Potato Curry

A sweet and filling curry. Optionally, halve the sweet potato and add 5 good sized carrots for a chewier curry.

Instructions
Step 1
In a pot, cook rice. When done, drain and set aside.
Step 2
In a wok, fry the sweet potato (and optional carrots) until soft at a medium to high heat.
Step 3
While cooking the sweet potato, chop spring onion roughly.
Step 4
Dice tomatoes. Add curry sauce, reduce heat to medium.
Step 5
Add spring onion and tomatoes.
Step 6
Stir occasionally to prevent burning, while allowing some liquid from the tomatoes to reduce.
Step 7
Add sultanas about 10 minutes before serving.
Step 8
NOTE: The more tomatoes that are added, the sweeter the curry will be.
Step 9
Serve with brown rice.
