15-minute Leek and Pork Stir Fry

The humble stir fry is one of my favorite easy meals. This is just one of a near-infinite number of combinations you can make with this cooking method.

Step 1
Combine doubanjiang, shrimp paste, fish sauce, sugar, sake, and mirin in a small bowl.

Step 2
Cut leek and wash to remove any dirt. Pat dry. Slice garlic and ginger.

Slice pork tenderloin into thin slices. (Freeze for 30 min for easier slicing, optional)

Step 4
In a wok over medium-high heat, add a splash of oil and saute leeks until lightly charred. Add garlic and ginger and cook for another 30 seconds.
Step 5
Push leeks to one side and add pork. Saute until just cooked through.
Step 6
Add sauce (pro tip, add it around the rim of the wok to get that 'wok-hey' flavor) and coat the other ingredients. Remove from heat.
Step 7
Serve with rice or noodles and garnish with your choice of ingredients. I used scallions and thai chillies.
