Preheat oven 400°

Make slits in your chicken breast. **make sure to not cut all the way through**

Cut the zucchini in half length wise (hot dog bun). Then thinly slice the halzed pieces of zucchini into half moon pieces.

Then thinly slice the tomatoes, bell peppers, and the red onion into half moon pieces.
Step 5
Place the slices of vegetables in the slits of chicken.
Step 6
Drizzle olive oil over chicken and then season with Italian seasoning, salt, and pepper.
Step 7
Sprinkle mozzarella cheese on top.
Step 8
Bake until chicken is cooked through, 25 mins.
