Step 1
Preheat oven to 210’C fan. While it’s heating slice the leeks and put in metal roasting tin with the oil. Mix well and put in oven.
Step 2
Whisk egg and milk together. Then slowly add the mix to the flour until smooth. Stir in the crumbled feta.
Step 3
When oven is at temperature, take out the leeks, stir and pour over the batter. Scatter over the tomatoes including the vines. Then the artichokes and return to oven for 25-30 mins until well risen and golden brown. Serve with dill scattered on top and with a lemon/olive oil dressed baby spinach salad.
