Sticky Mushroom Miso Rice with Green Onion Dressing

Instructions
Step 1
Clean the mushrooms and rip them into bite sized chunks
Step 2
Toast mushrooms in a dry, deep pan on high heat for 4-5 minutes, until golden in places
Step 3
Pour 2 tbsp of veg oil into the pan and fry the mushrooms for a further 2-3 minutes until golden all over
Step 4
Add the uncooked rice to the pan, tossing together so that the grains are coated in oil
Step 5
Add 1.5 cups water along with the 1 tbsp of miso paste to the mix and stir. Bring to a boil.
Step 6
Cover the pan and simmer for 15-20 minutes to cook the rice
Step 7
Remove the roots from and thinly slice the green onions. Finely grate the 2 cloves of garlic. Mince the pepper.
Step 8
Heat the remaining 4 tbsp of oil in a small pan over high heat.
Step 9
Add the onion, garlic, and chili to the pan, along with the 1 tbsp of vinegar, 1 tsp of sugar and a pinch of salt. Mix to combine, then remove from heat.
Step 10
Serve!
