Instructions

Vinaigrette

Step 1
In small bowl, whisk together the oil, vinegar, mustard, shallot, salt, and pepper to taste. Place the greens in a large bowl; lightly drizzle with the vinaigrette and toss to coat.
Step 2
Smear some of the hummus in each of the four shallow bowls. Place the greens on top of the hummus. Top the greens with 1/2 cup chicken, pork, bacon or egg. Sprinkle with sunflower seeds and red pepper flakes, if using.
