Ingredients

1 Tbspolive oil
12 ozrope sausage
cut into 1/2 slices

2 cupsyellow onion
chopped

1 cupcelery
chopped

1 cupred bell pepper
chopped

2 Tbspminced garlic

1jalapeño pepper
seeded and minced

2 cupsrice
uncooked

3 cupsunsalted chicken stock

1 x 14.5 ozcan diced tomatoes
drained

1 ½ tspsalt

½ tspcayenne pepper

1 lbshrimp
large, pelled and deveined

½ cupscallions
plus more for garnish

2 Tbsplemon juice
Instructions
Step 1
Heat oil in dutch oven over medium high heat Add sausage and cook until browned
Step 2
Add onion, celery, bell pepper, garlic, jalapeño, cook 5 minutes until softened
Step 3
Add rice, stock, tomatoes, salt, cayenne, bring to boil, then reduce to simmer. Cook until rice is tender
Step 4
Add shrimp and cover, cook 4 minutes or until pink
Step 5
Stir in scallions and lemon juice
Step 6
Serve with extra scallions as garnish
