Instructions

Step 1
Sauté onion, celery, and garlic in the butter and olive oil over medium heat
Step 2
When the onion becomes translucent, add the flour, and make a roux
Step 3
Let the butter and flour mixture cook for about a minute before adding the half and half
Step 4
Cook gnocchi according to package directions
Step 5
Into the roux, add in the carrots and chicken
Step 6
Once the mixture becomes thick, add the chicken broth
Step 7
Once the mixture thickens again, add the cooked gnocchi, spinach, and seasonings
Step 8
Simmer until soup is heated through
