Instructions
Step 1
Rinse the Puy lentils and place them in a medium saucepan with 2 cups of water. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender but still hold their shape. Drain any excess water and set aside.
Step 2
In a large bowl, combine the cooked lentils, diced apple, chopped walnuts, and chopped parsley.
Step 3
In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper.
Step 4
Pour the dressing over the salad and toss to coat all the ingredients evenly.
Step 5
Serve immediately, or refrigerate for later.
