Instructions
Step 1
Soak beans over night or bring to a boil, cover, remove from heat and let sit for 1 hour. Rinse with water.
Step 2
Dice carrot, celery, onion, and bell pepper.
Step 3
Heat oil in a large pot over med heat. Add carrot, celery, onion and bell pepper and sweat for 3-5 minutes. Sprinkle the thyme, red pepper flakes and a pinch of salt and pepper, stir for 1 minute.
Step 4
Add the beans, broth, bay leaf, and the salt and pepper.
Step 5
Bring to a boil over med-high heat, reduce to simmer over med-low. Cook for 1 1/2 to 2 hours, until beans are tender.
Step 6
Juice the lemon, add the hot sauce and whisk together.
Step 7
Place 1 cup of greens to a salad bowl, drizzle some of the lemon-hot sauce over the top, stir to combine. Using a slotted spoon, top the greens with drained beans. Serve with bread if desired.
