Instructions

Step 1
1. Preheat the oven to 220°C.
Step 2
2. Cut the vegetables into 2-3cm cubes. Place into a tray, drizzle with oil, season with salt and pepper.

3. Toss well and roast for 20-25 minutes.
Step 4
4. Heat the olive oil in a pan, add the onions, then fry for 5-8 minutes.
Step 5
5. Stir in the paprika and tomato paste. Add the chopped tomatoes, season and simmer for 15 minutes, then stir in the chickpeas and roasted vegetables. Cook for 5 more minutes.
Step 6
6. Stir in the garlic and herbs.
