Rainbow Chicken Quesadillas

Instructions

Step 1
Heat 1 teaspoon of nut oil in a large skillet, over medium heat.
Step 2
Add beets and salt and pepper, then cook for approx 30 minutes, until nicely tender.
Step 3
Grab a second skillet and heat remaining oil on medium.
Step 4
Toss in the squash and mushrooms, season, and cook for 5 minutes (keeping them apart will stop them going beet color).
Step 5
Put squash and 'shrooms on paper towel.
Step 6
Using the same frying pan, cook your chicken to nice and golden, then cut into small squares.
Step 7
Wipe down pan with paper towel, drizzle with nut oil, then cook a tortilla over medium heat.
Step 8
Once in frying pan, top of the tortilla: spread with 12 of the pesto, then add Y each of cheese, beets, mushrooms, squash and chicken.
Step 9
Once the bottom of your tortilla starts to crisp, fold in half, covering the filling
Step 10
Remove your quesadilla, slice up, and repeat for each tortilla.
Step 11
Then dig in!
