Orecchiette Pasta with Sausage
Delicious! Such a good meal! I updated the recipe to add a little cream — 1/3-1/2 cup. In all the recipes online, most had some cream…. So I added it to this recipe. I think it’s a keeper

Ingredients
5 servings

6 Tbspolive oil

1 lbSausage
out of casing

1onion
large

8 ozwhite wine

8 ozchicken stock

⅓ cupheavy cream

2 cupsSweet Peas frozen
6Grating Cheese
Pecorino Romano or Parmesan, or mixture of both
1 lbOrcchiette Pasta
cooked in generously salted water

¼ cupPasta Water
if needed

roma tomatoes
diced

basil
chopped
Instructions
Step 1
*Start boiling the salted water and cook the pasta while you make the sausage mixture.
Step 2
In a pan, brown the sausage in the olive oil. Once browned, take out of pan and add onion (add a bit more oil if needed). When the onion is cooked add back sausage and add white wine. Cook until most of white wine is cooked away. Add the chicken stock – and let simmer for 5 minutes so that ingredients can blend. Finally add cream, to your prefernce.
Step 3
Drain pasta after saving some pasta water. Add the pasta to the sausage mixture – mix well. While mixing, add the grating cheese & peas. Mix well – peas will cook and you will see the cheese melt. If you find there is not enough liquid, you can add a small amount (no more than 1/4 cup) of the pasta water… it is a personal preference as to how creamy you’d like the mixture.
Step 4
Plate the pasta dishes, top with chopped tomatoes and basil. Add more cheese if you would like!
