Spanish Tortilla / Omelet

The Spanish tortilla is one of the most popular egg dishes in the world. It is essentially an omelet, made with eggs, potatoes, and onions. It is thick, fluffy, and one of my favorite omelets out there. This is a great dish if you are looking for a new breakfast to have! It is easy and heartier than most omelets out there.

Instructions

Step 1
Prepare the potatoes and onions.
Step 2
In an 8 inch non stick pan, add the olive oil and heat over medium heat. Add the potatoes and cook by occasionally stirring. After 3 minutes of cooking, add the onions and salt all over. Cook until the potatoes are fork tender. Strain through a fine mesh strainer.
Step 3
In a separate bowl, whisk the eggs. Add salt and the potato mixture. Mix in with a spatula and let it sit for 10 minutes. This helps thicken the mixture.
Step 4
In the same pan over medium heat, add a few tablespoons of olive oil and add the eggs. Let it cook over medium heat for around 10 minutes until just the top barely jiggles. Flip the omelet onto a lid and slid it back into the pan. Cook another 2 minutes.
Step 5
Slide the omelet out of the pan, onto a plate and serve.
