Instructions

Step 1
Make the sauce! Put some water in a pan with your mushrooms and 2tbsp soy sauce. Let it simmer until pretty much all the water is gone. This will take a while. Chillax.
Step 2
You can cook the rice noodles in the meantime. Just put them in boiling water and let them sit for a bit.
Step 3
Fry up edamame and kale and green onions (chop them up first) in some olive oil. The oil is important. Put the noodles in and they will get slightly crispy which will be really yummy.
Step 4
Mix up a teaspoon of lime juice, rice vinegar, soy sauce and brown sugar.
Step 5
Add the mushroomy sauce to the pan with the noodles etc. If u hate mushrooms u can drain it out and just use the sauce but the mushrooms are good.
Step 6
Add the other bit of the sauce and mix in. Add some extra oil for that authentic take away vibe. You can add some kind of chicken substitute at this point like tofu.
