Instructions
Step 1
In a large heavy saucepan, melt the butter and saute the onion in it until tender.
Step 2
Add celery and cook 5 mins longer.
Step 3
Add remaining ingredients except carrots, bring to a boil, cover and simmer gently 25 mins, stirring occasionally.
Step 4
Add carrots and cook 5 mins longer or until barley and lentils are tender.
