Wild Garlic + Pistachio Pizza with Burrata

This pizza is one of our favourite decadent springtime treats. The delicious wild garlic pesto and creamy burrata cheese mixed with the crispy pizza base is just so good. Add some crunchy pistachios on top and you have a taste and texture explosion! Use store bought pizza dough if you'd like to skip making it yourself. If you don't have access to wild garlic, you can substitute basil leaves into the recipe.

Instructions

Make the pesto

Step 1
First make your wild garlic + pistachio pesto according to recipe instructions. It has been posted on my Whisk profile and also in the Lace Bakes community on Whisk.

Bake the pizza base

Step 2
I like to use the frying pan method for cooking my pizza base, but feel free to bake it as you normally would in a pizza oven, your normal oven or on a pizza stone if you wish.
Step 3
For the frying pan method, preheat a large frying pan (12 inches or larger) over a medium high heat. Now preheat your grill/broiler to 275C/525F and place your oven rack in the upper 1/3 of the oven, so it's close but not directly under the grill/broiler.
Step 4
Lightly oil your frying pan with a bit of olive oil. Now stretch your pizza dough and gently place it into the frying pan. Let the base of the pizza dough crisp up in the frying pan over medium -medium/high heat. Once the base is golden brown and crispy, transfer the pizza dough base onto the oven rack that has been placed in the upper 1/3 of your oven.
Step 5
Let the pizza base bake and crisp up under the broiler/grill, it should only take 3-5 minutes max. Keep an eye on it as it can burn quickly when it's so close to the direct heat.
Step 6
When it looks like it only has about a minute left of cook time, remove the pizza base from the oven and top it with as much pesto as you desire. Now place the pizza back into the oven. We just want the pesto to gently warm up on the pizza base, if it cooks too long it can turn a brownish colour. Just give it a quick blast in the oven for a minute and then remove.

Assemble the pizza

Now top your pizza with the ball of burrata cheese, drizzle the burrata with any green oil that has settled at the top of the pesto, sprinkle with a little sea salt and then scatter the chopped pistachios on top of the entire pizza and the burrata cheese. Cut and enjoy - this is a good one to share as it can be quite rich!
