Saucy Skillet French Onion Soup Meatballs With Egg Noodles

Instructions

Step 1
Bring pot of salted water to a boil. Add egg noodles, stirring occasionally, and cook for 4 - 5 minutes. Strain pasta, put back in pot, stir with butter and season with salt and pepper. Put on lid to keep warm.
Step 2
Mince garlic cloves. Halve and thinly slice all of the onion.
Step 3
In a large bowl, mix ground beef, panko, egg, 3/4 teaspoon salt, and a few grinds of black pepper. Shape mixture into 8 meatballs (2 tablespoons each approx.) Heat 1 1/2 teaspoons oil in medium ovenproof skillet. Add meatballs and brown on all sides (will not be cooked through), 4-6 minutes. Transfer to paper towel lined plate. Discard fat from skillet.
Step 4
Preheat broiler with top rack 6 inches from heat source. Melt 2 tablespoons of butter in same skillet over medium heat. Add sliced onions and season with salt. Cook, stirring occasionally, until onions are browned (if skillet gets too dry, add 1 tablespoon of water, as needed), 8-10 minutes.
Step 5
Add 1/2 tablespoon of flour to skillet over medium high heat, stirring to coat the onions. Stir in broth. Cook, stirring occasionally, until sauce is slightly thickened, about 3 minutes. Add meatballs back to skillet, then reduce heat to medium low. Simmer until meatballs are cooked through, 2-3 minutes.
Step 6
Sprinkle mozzarella over meatballs. Broil on top oven rack until cheese is melted and brown in spots, 1-2 minutes. Serve egg noodles with French onion soup meatballs on top.
