Ingredients
3 servings
1 x 14 ounceSmoked Sausage
or Andouille Sausage, sliced
1 poundshrimp
thawed, peeled and deveined
1 ½ cupscelery
chopped
1 cuponion
chopped
1 cupbell pepper
chopped
1 tablespoonminced garlic
½ cupokra
sliced
1 ½ tablespoonsextra virgin olive oil
1 ½ tablespoonsseasoning
1 x 10 ouncetomatoes with green chilis
can, drained
1 tablespoonbutter
Instructions
Step 1
Combine all of the ingredients, except the canned tomatoes and butter, in a large bowl and coat with olive oil and seasonings.
Step 2
Heat a large skillet or griddle to medium heat and add nonstick spray. Add the seasoned meat and vegetables to the skillet. Try to align everything in one layer, if you can. Everything will still cook through if you can't, but this way you can get a nice sear on everything.
Step 3
Cook for three minutes, stir and add the drained tomatoes and butter, cook for an additional 3-4 minutes, or until the shrimp is pink and the veggies are fork tender.
