Instructions

Step 1
First, start frying the bacon pieces in a (cast iron) skillet that’s already hot (medium to medium high heat). Add in chopped onion and garlic, and let everything brown down.
Step 2
Add the whole stick of butter to the pan. Let it melt completely and become a part of the sauce.
Step 3
Mix in the flour, then season as much as you’d like with the Cajun (Two Step Fire) seasoning, add the whole milk and half & half, and mix to incorporate.
Step 4
Once all the flavors have had a bit of time to mingle over the heat, take the skillet off. With your green beans in a large heat-proof bowl, pour over the sauce you just made in the skillet. Add in the shredded cheese, and stir everything until the cheese is melted.
Step 5
Add the whole mixture to the pan you’ll be using to bake it in (aluminum or glass, typically). Cover with a healthy amount of crushed Ritz crackers (1 cup?). Bake at 350°F until the crackers crisp up even more and get a bit brown. Enjoy!!
