Instructions
Step 1
Preheat oven to 375. Rinse and soak the rice. Combine spices except saffron in a small bowl. Rub chicken with oil, then some of the spice mixture.

Heat oil in a large, oven-safe skillet. Brown chicken, then transfer to a plate.
Step 3
Toast rice for a few minutes then add garlic, then chicken broth, raisins, juice from half the lemon, and remaining spices. Crumble in saffron if using. Bring to a simmer and return the chicken to the top of the rice. Cook 30 minutes or until chicken is cooked through.
Step 4
Serve with spinach flavored with cinnamon, cumin, and olive oil.
