SPANAKOPITA TRIANGLES - flaky, crunchy and so so cheesy. This recipe is a mashup between a spanakopita and bourekas, all you need for these hand pies are store bought phyllo pastry, spinach, feta and some other grated cheese of choice. Feta is great on its own, but I like the additional creaminess mozzarella brings Fold the cheesy phyllo, bake it and there you have it!

Step 1
1. Heat the oven at 400°F or 205°C.

3. Combine the cheese, spinach and pinch of salt in a bowl. Whisk the egg in a bowl.

4. Cut the phyllo pastry sheets into two sheets, lengthwise. Lay a pastry sheet on your work surface, drizzle a bit of oil or butter on top, then place another sheet on top.

5. Brush the egg wash on both ends of the phyllo sheet. Sprinkle the cheese spinach filling on 2/3 of the sheet. Fold the phyllo forming a triangle, as seen in the video.

6. Set the spanakopita pocket on a baking sheet and repeat until you’re out of filling.
Step 6
7. Brush each pocket with egg wash or oil or butter. Sprinkle sesame seeds and salt on top.
Step 7
8. Bake for 25 to 35 minutes or until golden brown. Serve right away or store at room temperature in a dry spot.
