Salsa de Chile de Arbol
1. In sufficient water over medium heat add onion, garlic and serrano.
2. Add tomatillos to the hot water.
3. In shallow vegetable oil, pan fry guajillo chili. Add to water. Careful not to cook too long as darker overcooked chilis will result in a darker salsa. Goal is bright red.
4. Do the same with the arbol chili. Add to water.
5. When the tomatillos turn pale and soft remove from water.
6. Add to food processor. Add all the other ingredients. Add salt. Process until done.
This is a spicy salsa that will mellow out overnight.
