1 Tbsoil
or butter, divided, more as needed
1 lblean ground beef
can also use chicken, turkey, or pork
2 clovesgarlic
minced, W
2 cupsfrozen stir-fry vegetables

3 Tbslow-sodium soy sauce
divided
4 cupsmedium grain rice
cooked and chilled, leftover from Baked Soy Chicken and Veggies on page 69
1 Tbssesame oil
Optional toppings
green onion
chopped, or cilantro if you have it
Instructions
Step 1
Heat half of butter in a large nonstick pan or wok over medium-high heat.
Step 2
Add beef and cook, breaking into small pieces with a spoon, until browned.
Step 3
Add garlic and frozen stir fry vegetables and cook for 2-3 minutes, or until softened.
Step 4
Transfer to bowl and set aside.
Step 5
Add remaining butter to pan over medium-high heat.
Step 6
Add rice, soy sauce and sesame oil, if using.
Step 7
Stir until rice is heated through, 3-4 minutes.
Step 8
Turn heat down to medium-low.
Step 9
Add beef and vegetable mixture back into pan.
Step 10
Mix gently until everything is well- combined and warmed through.
Step 11
Add more soy sauce if desired.
Step 12
If using, drizzle with more sesame oil or top with green onion or cilantro.
Step 13
Serve immediately.
Step 14
Note: It's important to use COOKED and CHILLED rice. Otherwise, you'll end up with mushy, sticky rice.
