Instructions

Step 1
Preheat oven to 400 degrees.
Step 2
Remove skin from the salmon fillets. Roughly chop salmon fillets or pulse in food processor for 1 minute. Combine all ingredients expect avocado oil in a large mixing bowl and mix together.
Step 3
Portion salmon mix to desired size, eg. 6 portions of 2 oz each roll into a ball, and then flatten slightly to make a cake.
Step 4
Preheat large skillet over medium-high heat. Once skillet is hot, add avocado oil and sear both sides of salmon cake for 2 minutes on each side, or until golden brown.
Step 5
Place seared salmon cakes on baking sheet and bake for 5 minutes. Serve and enjoy with a squeeze of lemon juice.
