1 lbsChicken thighs
diced and seasoned with 1 tsp of cajun seasoning

10 ozSmoked sausage
sliced

2 cupsLong Grain Rice

2 TbspCajun Seasoning

1Green Pepper
diced

1 cupCarrot
diced

2 stalksCelery
diced

1 cupYellow Onion
diced

4 ClovesGarlic
chopped

1Jalapeno Pepper
sliced

7 fl ozDiced Tomato

3 tspTomato Paste

1 Tbspworcestershire sauce

½ cupParsley
chopped

2 cupsChicken Broth

3bay leaves

10 ozShrimps
optional, peeled
Instructions
Step 1
• Heat oil in a heavy-based skillet over medium-high heat and saute chicken and sausage until cooked. Transfer to a bowl and set aside.
Step 2
• Using the same skillet add tbsp of oil and saute all of the vegetables
Step 3
• Add cajun seasoning and tomato paste. Stir for a minute.
Step 4
• Add rice and stir for 1 minute.
Step 5
• Add dice tomato and broth
Step 6
• Add Worcestershire sauce
Step 7
• Add the meat back and throw in some bay leaves
Step 8
• Cover and simmer for 10 minutes
Step 9
• Add shrimps (optional) and cook for another 5 minutes or until the rice is cooked.
Step 10
• Garnish with parsley
