Low Sugar Stracciatella Ice Cream with Truvia
This is a reduced-sugar Stracciatella-type ice cream. It's somewhere in between ice cream and gelato, however, it's a no-cook recipe which is why it's more of an ice cream.
This recipe uses half sugar, half granulated Truvia (erythritol+monk fruit sweetener), but you could sub full sugar or full Truvia instead.
Quick note on the vodka-this is to lower the freezing point to combat the iciness that Truvia gives the mixture. It's a very small amount and you can't taste it at all. If you make this recipe with full sugar, I recommend skipping the vodka. You can also change the amount of vodka to change the ice cream consistency.

In a medium mixing bowl, whisk together sugar, Truvia, and milk. Add cream, vanilla extract, and vodka.

Transfer to ice cream mixer and follow directions on mixer.

With 5 minutes remaining on ice cream maker, very slowly drizzle in chocolate. The chocolate will freeze on contact and break into pieces.
