Step 1
Let rice cool completely with lid off before starting. Try and dry the rice out as much as possible and avoid overly sticky or moist rice. For best results, leave rice uncovered in fridge overnight to help dry out.
Step 2
Heat large non-stick pan (deep and wide) with canola oil and add the garlic and mince pork and cook thoroughly on medium heat. Next, add onions, capsicum and sauté for until soft. Season the mixture with some salt and pepper before adding peas, corn and carrot mix and cook for another 2 minutes.
Step 3
In bowl, combine all sauces, vinegar, sesame oil. Now add the rice into the pan and mix thoroughly. Pour half of the sauce over the rice mixture and mix well. Then pour the remaining amount and stir again to fully incorporate into the rice. Add dried chilli if you like.
Step 4
Keep frying and stirring the rice though for about 3-4 minutes. Then flatten rice down into the pan making sure to cover the entirety of the bottom. Cut butter into wedges and jam them into the rice until it hits the bottom of the pan. Squeeze lemon over rice. Do not mix. Cover pan with lid or foil and let it cook for about 10 -12 minutes on low to medium heat. Do not mix or stir, just let it sit to crisp up the bottom.
Step 5
While the rice is crisping up, scramble the eggs and cook in fry pan. Dice cooked eggs to serve on top with chopped spring onions. Maybe a sprinkle of sesame seeds too.
