Instructions
Step 1
Cook onions and carrots until soft/browned.
Step 2
Add herbs and tomato paste, cook for a few minutes till it darkens.
Step 3
Add garlic and then red wine to deglaze pan. Cook off alcohol then add lentils, walnuts a nd stock. Bring to boil then reduce heat and cook for 20 minutes.
Step 4
Add tomatoes then cook for another 20/30 mins on a low heat, stir regularly and make sure to get brown bits off bottom of pan before it burns.
Step 5
Finish with balsamic vinegar
