Instructions
Step 1
In a small mixing bowl, whisk together the brown rice flour, arrowroot, and salt.
Step 2
Add the boiling water and quickly mix with a fork.
Step 3
Knead the dough a few times to form a ball. It should have the texture of Play-Doh.
Step 4
If it is too wet and sticky, add more flour. If it is too dry, add a little more boiling water.
Step 5
Heat a 10-inch cast-iron skillet over medium heat.
Step 6
Divide the dough into six to eight equal-size balls, Place a piece of parchment paper on the bottom of a tortilla press, then place one of the balls in the center and cover with a second sheet of parchment.
Step 7
Press to form a thin, round tortilla.
Step 8
Add about 1 teaspoon coconut oil to the hot skillet.
Step 9
Gently remove the parchment paper and place the tortilla in the hot skillet.
Step 10
Cook for 2 minutes on each side.
Step 11
Repeat with the remaining dough, adding more coconut oil to the skillet each time.
Step 12
Place the cooked tortillas on a plate with another plate flipped on top to keep them warm. Let them sit for 20 minutes to help become more pliable.
