Masa Harina Tortilla

Tortilla is an awesome flat bread that doesn’t require much work nor ingredients. This is a purple corn tortilla recipe, so you got yourself a gluten free wrap bread. Enjoy your tortilla with any toppings you like. be it guacamole and other Mexican flavors or get creative turn any of the sandwiches I have here for you to a gluten free wrap. Another option of flour you can go for: quinoa, millet, amaranth, oat.

Instructions

Step 1
First we start by measure the masa harina, place in a bowl with the salt.
Step 2
Add half the amount of water, mix with a fork, until it is cool enough to handle by hand.
Step 3
Knead by hand, and then slowly add the rest of the water until a firm ball of dough is created.
Step 4
Cover, and allow to rest for 5minutes to come together. It doesn’t contain gluten to the resting is minimal and can be skipped.
Step 5
Divide into 30 to 40g balls, take a ball & flatten by: pressing with cast iron tortilla press, or rolling pin. The reason I love using the tortilla press is because you can get so much more for your time.
Step 6
Preheat your skillet, I usually go for a cast iron or stainless steel skillet. Turn the heat down to medium and cook your tortilla on one side for few minutes. And then flip and cook on the other side. When you flip you will see the tortilla puff up, I love how fun tortilla can be.
Step 7
To ensure soft tortillas, wrap them in a towel and place in torilla warmer or wide pot.
