Instructions

Step 1
Preheat oven to 375
Step 2
Dice potatoes into 1 inch cubes. No need to peel! Spread evenly on two baking sheets. Drizzle with olive oil, add salt and pepper to taste. Roast for about 25 minutes. Turn potatoes halfway through using a spatula.
Step 3
Meanwhile, cook the ground turkey and red bell pepper together. Remove to a large bowl.
Step 4
Scramble the eggs, and cook over medium heat. Remove eggs to the bowl with the turkey. Add the diced green onions, and mix well.
Step 5
Assemble!
Step 6
Add about 1 cup potatoes to 12 freezer containers.
Step 7
Top potatoes with about 3/4 cup of egg/ground turkey/veggie mixture.
Step 8
Sprinkle each one with a little cheddar cheese.
Step 9
FREEZE!
