Instructions

Step 1
Cook couscous according to packet instructions.
Step 2
Toast almond and pine nuts in a dry frying pan for 3 or 4 mins on medium to high heat until lightly toasted and fragrant, tossing frequently to prevent burning.
Step 3
Chop coriander and grate zest of 1 lemon and squeeze 1/2 lemon
Step 4
Add all ingredients above to couscous, plus the pomegranate, salt and pepperand stir thoroughly.
Step 5
Taste. Add more lemon juice and seasoning to taste
