Chicken & Bacon Red Pesto Pasta with Mexican Cheese

Instructions
Step 1
- Start by boiling 150g of pasta in salted water
Step 2
- Next fry off a diced onion and a thinly chopped red pepper for a few minutes and then add a tbsp of garlic puree, 51g of lean diced bacon and 200g of chicken breast until cooked.
Step 3
- Add half a jar of red pesto I used one from @aldiuk , 1/2 tsp of mixed herbs and then add 3/4 of a tub of passata and 30ml of almond milk (can use any milk here) and leave to simmer.
Step 4
- Add in your cooked pasta and squash down into your frying pan (or transfer to baking dish) and I added 3 slices of chilli Mexican cheese and a further 20g of smoked bacon on the top and popped under the grill until golden and bacon cooked.
Step 5
- Served with some fresh basil scattered over the top! I also had some garlic bread and salad on the side!
