Ingredients
8 servings

1 tablespoonoil

0.5onion

1 tablespoongarlic

2 cupschicken
shredded

1 teaspoonground cumin

1 teaspoonchili powder
2cans cream of chicken low sodium

2 tablespoonscanned green chilies

1 cupsour cream
1can low sodium red enchilada sauce

3 cupsshredded mexican cheese

12tortillas
Instructions
Step 1
Heat oven to 350°
Add oil, chopped onion and garlic to pan. After 2 minutes add chicken. Fry for 2-5 mins. Add Cumin and Chili powder mix well. Add cream of chicken and green chilis and half of sour cream, mix well. Set aside. In a sauce pan mix red enchilada sauce with the rest of sour cream. Spray 11x14 glass pan. Add 1/4-1/2 of cream of chicken mixture to middle of tortilla. Sprinkle some cheese on top. Roll up. Repeat until you get 12-14 tortillas. Pour desired amount of red enchilada mixture over top. Sprinkle cheese over the top.
