Meatloaf Balsamico with Mashed Sweet Potato & Green Beans

No matter which way you try to dress it up, a meatloaf is all about the meat. Which is why we’re adding little more than a few breadcrumbs to keep it moist and a smattering of balsamic ketchup glaze to keep things interesting. That’s all you really need (along with some green beans and mashed sweet potato) to emphasize the classic timelessness of this dish.

Instructions

Preheat oven to 450 F

Step 1
Add garlic, onion, parsley, panko, beef, & ½t salt to same bowl. Season with pepper, then mix with hands to combine. Form into two 1” tall loaves; place on a lightly oiled baking sheet. In sm. bowl, mix 1T balsamic vinegar & ketchup; brush onto meatloaves. Bake (25 min.) until no longer pink in center.
Step 2
After meatloaves have baked 10 min., remove from oven. Toss green beans on same baking sheet with drizzle of olive oil & pinch of salt & pepper. Return to oven & bake(15 min.) until meatloaves are cooked through and green beans are slightly browned.
Step 3
Mash sweet potato with 1T butter, & honey. Season generously with salt & pepper.
Step 4
Sprinkle almonds over green beans, tossing to combine. Divide meatloaves between plates & serve with sweet potato mash & green beans.
