Instructions

Step 1
Heat the oil in a large, heavy wok or skillet over high heat.
Step 2
Add the chicken and cook, stirring occasionally, for 5 minutes, or until golden in places.
Step 3
Mix all the piri-piri sauce ingredients together in a bowl and add the mixture to the pan with the chicken.
Step 4
Stir-fry for a further 3 to 4 minutes, stirring occasionally, until the chicken is cooked through and has absorbed the flavour of the sauce.
Step 5
Garnish with thyme sprigs.
Step 6
Serve hot with steamed rice and a crisp green salad, if liked.
