Instructions
Step 1
In a medium pot, add the stock and potatoes. Cover and bring to a boil. Reduce to a simmer until potatoes are fork-tender - about 15 minutes.
Step 2
Stir in the frozen peas, celery, carrot, and spices. Simmer until carrots are nearly soft - about 10 minutes.
Step 3
Transfer the soup to a blender, working in batches so that you don't over-fill it. Blend until creamy.
Step 4
Serve while hot with a dollop of sour cream. Enjoy!
